Cold fermentaion in 100% stainless steel, aging from 10 to 12 months. White fruit flavours with a nice minerality, perfect as an aperitif or with oysters, shelfish, or grilled fish.

A rounded, fuller style of Chablis with aromas of buttered toast in addition to classic mineral tones, with toasty oak, fresh lemon and a slight creaminess on the palate. The finish is long and mineral with a hint of umami and salinity.

Lovely golden yellow colours, it has a elegant and discreet nose. In the mouth, the combination of richness and minerality, gives a wine of great finesse and style. Vinification and ageing on fine lees during 12 months (minimum) for 15% in oak.

Medium body and slighty dry, citrus, pear and green apple fruits with light oak and toast flavours

A terroir in the calcareous bedrock of the Bajocian.This rock slope at an altitude of 400 meters is facing north-east on a gentle slope. It produces a fresh and mineral wine, finely saline and of great precision.

5 parcels in Le Vaillon (the best and original part) as opposed to Les Vaillons. Average 50 year old vines. 35% barrel fermented (4% new oak).
