Wine Description:
A full style, ripe Chardonnay from Domaine de Cassagnau showing rich stone fruits and citrus.
Benefiting from the Mediterranean climate under oceanic influence, the Chardonnay vines are exposed to the north to benefit from the coolness of the Pyrenean foothills during hot summers, so the grapes retain good acidity and exceptional aromatics.After the harvest, the grapes are carefully transported to the vat room to obtain, by light pneumatic pressing, a rich and aromatic must. Once cold settled, the must is vinified and clarified at low temperature, in vats. At the end of the alcoholic fermentation, aging on lees begins until January. Before bottling, fining with bentonite helps clarify the wine and give it all its shine.
